Breakfast Bounty

The combination of Coconut, Almonds, Dates and Apple - known as CADA- is by no means my invention. My goodness it certainly encourages me out of bed in the morning. This is possibly the most simple gluten free/dairy free breakfast I have ever eaten AND been satisfied by.

CADA Breakfast

Handful of coconut (I use desiccated)
Handful of Raw Almonds
2 Fresh Dates (seed removed)
1/2 Apple

Combine in your food processor/blender/Thermomix etc until coarsely chopped together - like muesli. Top with any extra fruit, or yoghurt you desire. Makes one large serve. 

I made this sweet smelling Tahini and Rosewater Cream to go over it yesterday - but ate it all before I could take a photo!  It was more like desesrt than breakfast.

Tahini and Rosewater Cream

1-2 Tbs Tahini
1 Tsp Rosewater
1/2 Tsp honey (if needed)

Mix ingredients together with a spoon or fork until smooth. Drizzle over fruit.

I have been playing around with toppings and other additions to this basic idea. I have discovered that you can actually make any combination of fruit and nuts into this wonderful breaky consistency provided the fruit isn't too soft or juicey.
Try these additions or subtractions to the recipe: pears, raw walnuts, sunflower seeds, pumpkin seeds, raw cashews, just ripe stone fruit.
You could also add a teaspoon or more of coconut oil or tahini to add some healthy fats and increase the time before you get hungry again.
